Capers of Santorini, is a small scrumptious fruit that comes from small shrubs that grow on the hillsides of caldera, or on the terraces all over the island. The entire plant is edible, its blossoms, its fruits and its leaves. Capers can be found fresh or desiccated and can be used on your salads or sauces if someone wants to give a flavour of Aegean to the recipe. And do not forget the Santorini capers leaves. They are a special delicacy and you can find them packaged by the Sineterismos (Agricultural Cooperative Society). Taste them in the Greek salads served all over the island and if you're really like them, you can find them in most of the local product stores.
